Anzac Biscuits....Despite the name, they are cookies!


From Australia
1 cup plain flour
1 cup rolled oats
1 cup brown sugar
½ cup
coconut
1 c. butter
2 tablespoons golden syrup =  a pale cane syrup
1 tablespoon water
½ teaspoon bicarb soda

Directions

Sift the flour into a bowl. Add the sugar, rolled oats and coconut.
Melt the butter in a saucepan and add the golden syrup and water.
Stir the bicarb soda into the liquid mixture.
Add the liquid to the dry ingredients and mix thoroughly.
Place walnut-sized balls of mixture on a greased tray and bake for 15-20 minutes at 175°C.
Biscuits will harden when cool.

Sri Lankan chicken Curry



INGREDIENTS:

1 chicken
4 teaspoons minced garlic
2 teaspoons minced ginger
salt & pepper
2 teaspoons raw curry powder

1 teaspoon chilli powder
3 tablespoons vegetable oil
8 curry leaves
2 onions (sliced)
1 x 2  cinnamon stick
4 cardamom pods (split)
1/4 teaspoon crushed clove
8 oz. coconut milk

DIRECTIONS:


Cut the chicken into pieces, wash it & drain the water well. Now in a large bowl mix all the spices with chicken pieces (Chicken, salt, pepper,  curry powder, chilli powder, curry leaves, cinnamon stick, cardamom pods, cloves) make sure that chicken pieces coated well with spices. Now cover and leave it for at least 15-20mins.


Once chicken is marinated, heat the oil in a large saucepan, add the ginger & garlic and fry for 1minute, then add onions and cook for 4-5 minutes until lightly browned and soft.


Add the chicken pieces and try to fry both sides (it will brings you a good taste, but some times water is coming from chicken). After you fry both sides add 8 oz warm water, mix very well, then cover and cook on a low heat for 30- 45 minutes, stirring occasionally.
When water level is going down add the coconut milk, and stir the curry and bring to the boil then reduce the heat and cook for a further 15 minutes, taste for salt.

Chinese Chicken Wings

30 chicken wings
1/2 c. melted butter
1/3 to 1/2 c. brown sugar
1/2 c. soy sauce
1/2 c. water
1 tsp. dry mustard

 Mix all together and marinade chicken in it overnight in fridge...Bake at 350 for approx 1 hour...

Blueberry Grunt From Novia scotia



    Blueberry Grunt is another Nova Scotia traditional recipe. There is likely to be a grunt recipe in every local cookbook.
    Ingredients
    Sauce:
    4 cups wild fresh or frozen blueberries 1L
    1/2 tsp ground nutmeg 2 mL
    1/2 tsp ground cinnamon 2 mL
    3/4 cup granulated sugar 175 mL
    1 Tbsp lemon juice 15 mL
    1/2 cup water 125 mL

    Dumplings:
    2 cups all purpose flour 500 mL
    4 tsp baking powder 20 mL
    1/2 tsp salt 2 mL
    1 Tbsp granulated sugar 15 mL
    2 Tbsp butter or shortening 25 mL
    Milk
    Method
    1. In a large saucepan with cover, heat berries, nutmeg, cinnamon, sugar, lemon juice and water; boil gently until well blended and slightly cooked down. In a mixing bowl sift flour, baking powder, salt and sugar. Cut in butter and add enough milk to make a soft biscuit dough. Drop by spoonfuls into hot berry sauce.
    2. Cover tightly with a lid and simmer for 15 minutes (no peeking!). The dumplings should be puffed and well cooked through. Transfer cooked dumplings to serving dish. Ladle sauce over top; serve with whipped cream. Scrumptious!

    It's Greek To Me " Mousakas "

            (Baked eggplant minced meat & bechamel (white sauce))

    1 Pound minced meat (beef or veal)...I used beef
    3 3/4 C. big aubergines sliced...aubergines are eggplant
    2 C fresh milk
    7 Oz.  grated cheese....I used mozza...
    1 onion
    1 stick cinnamon (if you like it)
    16 Oz. tomatoes peeled (tinned can also do)
    half glass olive oil
    7 T.  butter
    4 T flour
    salt & pepper

    Fry aubergines (you can also do this the night before so it drains out all of the oil & dish wont be as oily). Brown the onions in saucepan with the oil & add minced meat then add mashed tomatoes without seeds & cinammon. Season with salt & pepper. Stir well & turn heat off.
    Heat butter in different saucepan add flour and brown. Pour milk in the saucepan. When set turn heat off. Add half the cheese.
    In oven dish arrange layer of aubergines, sprinkle with cheese then layer of minced meat, sprinkle with cheese, layer of aubergines. Pour the white sauce over it & sprinkle with cheese. Bake in moderate oven for 40 minutes.
    This serves 6-8 persons

    Rappie Pie

    It is a chicken and potato dish
    and here you can buy the bags of potatoes already grated. to form the crust and save a lot of work...but here is the original

    Rappie Pie

    Ingredients:

    1 medium-sized chicken
    3 large onions, chopped
    12 potatoes
    salt and pepper

    1/2 pd/250 g bacon, cut into small pieces
    1/2 tsp-1 tsp dried savory, or to taste

    Directions:

    1. Preheat oven to 350 degrees F/180 degrees C.
    2. Cut chicken into large pieces. Place in pot with just enough water to completely cover. Add onions and simmer until chicken is tender.
    3. Remove chicken from the pot, reserving the broth. Remove meat from the bones. Cut meat into smaller, bite-sized pieces.
    4. Grate potatoes. Place grated potatoes in cotton bag and squeeze vigorously to extract all the water. The goal is to get rid of as much starch as possible by squeezing out all the water.
    5. Bring the reserved chicken broth to a boil. Scald the grated, de-starched potatoes in an amount of broth equal to approximately 2/3 of the water you extracted from the potatoes. Blend the broth with the potatoes and season with salt and pepper.
    6. In heavy pot, sauté half of the bacon. Add half of the potato mixture. Spoon into greased rectangular baking pan. Add the chicken, sprinkle over with savory, then top with remaining potato mixture. Place remaining bacon on top.
    7. Bake for 1-1/2 hours, or until top is uniformly brown.

    Donairs To Die For!!

    3 pounds lean hamburger
    3/4 cup bread crumbs
    2 tsp pepper
    3 tsp cayenne red pepper
    2 tbsp oregano
    3 tsp paprika
    2 tbsp onion powder
    1 tbsp garlic powder
    1 tbsp salt

    Try this recipe. I like mine spicy so I use more cayenne pepper.

    Mix all of the ingredients together.
    If you have a food processor or even and electric mixer, take about a third of the mix and process it into a smooth blend. This will be the binder for the loaf.
    Press it into a loaf pan. I usually put some weight on it and leave it in the refrigerator over night. This helps with the texture and also lets the spices infuse.

    Cook for around 2 hours at 300F. Chill and slice into thin strips

    For the sauce:
    2/3 cup canned evaporated milk
    2/3 cup sugar
    1/4 cup white vinegar
    1 tbsp garlic powder

    This will make a nice garlicky sauce.
    The amount of vinegar may vary. I usually mix the evaporated milk, sugar and garlic powder and then slowly drizzle the vinegar in while mixing. I stop adding vinegar when the mixture has thickened. Let the sauce get cold.

    in a tin foil pan, first layer bottom with crisp golden cooked fries...next pile on the sliced meat....then cover in diced tomatoes and onions....load on mozza cheese and bake just til cheese is melted...
    Then top with cold sauce....
    Its heavenly!..I keep adding sauce as I eat it.

    the other alternative is the donair alone which is the meat, tomatoes, onions, cheese and sauce in pita bread...I prefer the plate though!

    Enjoy!..Its nearly impossible to make them as good as they do in Nova Scotia take outs...but its very close!...lol...
