It's Greek To Me " Mousakas "

     
                   Mousakas       

        (Baked eggplant minced meat & bechamel (white sauce))

1 Pound minced meat (beef or veal)...I used beef
3 3/4 C. big aubergines sliced...aubergines are eggplant
2 C fresh milk
7 Oz.  grated cheese....I used mozza...
1 onion
1 stick cinnamon (if you like it)
16 Oz. tomatoes peeled (tinned can also do)
half glass olive oil
7 T.  butter
4 T flour
salt & pepper

Fry aubergines (you can also do this the night before so it drains out all of the oil & dish wont be as oily). Brown the onions in saucepan with the oil & add minced meat then add mashed tomatoes without seeds & cinammon. Season with salt & pepper. Stir well & turn heat off.
Heat butter in different saucepan add flour and brown. Pour milk in the saucepan. When set turn heat off. Add half the cheese.
In oven dish arrange layer of aubergines, sprinkle with cheese then layer of minced meat, sprinkle with cheese, layer of aubergines. Pour the white sauce over it & sprinkle with cheese. Bake in moderate oven for 40 minutes.
This serves 6-8 persons
